Secular graces

Almost all my family and friends are religious (mostly Christian), so when we gather for a meal or special occasion, somebody usually says a blessing or grace before a meal. None of them know that I am an atheist, so at such times I make myself inconspicuous. However, I am occasionally asked by name to say the blessing.

I wondered if there were appropriate secular graces, and a quick Google search turned up a very pertinent site:

Some of you may find these graces diplomatically useful at appropriate times. They will certainly help me be more comfortable and prepared if I am called upon in the future.

As an aside, have any of you been asked to say a blessing/grace and how did you handle it?
